The Château de Gilly was the former residence of the Cistercian monks, originally a Benedictine priory under the reign of Germain, bishop of Paris, sold to the Cistercians much later.
It has retained its authentic character from the 14th and 16th centuries which is reflected in its moats and its dining room with its magnificent vaulted ceiling as well as the magnificent grand Salon Pierre de Nivelle, Abbot of Citeaux from 1625 to 1635, where you will take a delicious breakfast surrounded by sumptuous period ornaments.
There is also its magnificent park, of which the current garden is based on the pleasure garden “à la Française” of the XVIIth century with in its center a water jet basin in place of the old well. The Vouge river, which takes its source not far from there and stretches over 33 km, crosses the park of the Château de Gilly feeding the basin where the monks raised trout and other river fishes for their daily need. The reed basin, desired by the abbots of Citeaux, is still irrigated by water from the river. The park is also equipped with an open-air pool and a tennis court.

The decoration of your room or Suite respects the authenticity of the location and emphasises the character of this former residence of abbots from Citeaux: according to the room, exposed beam, old red floor tiles, superb wood panel, Burgundy stone fireplace, ironworks from the 18th century are part of the wonderful decor. Most of them offers a view over the French style garden and the village.
RESTAURANT CLOS PRIEUR
Lunch or dinner in the superb ribbed vaulted room supported by slender pillars, is an opportunity to immerse yourself in history, when it was originally the cellar of the Cistercian monks of Gilly. They kept there casks and barrels filled with wine from the vines of Clos de Vougeot, Morey, Chambolle and Flagey which had no cellar. The wines were transported there to age in good conditions.
A is served in this vast room divided into 3 naves on 2 rows of cylindrical columns supporting ribbed vaults or during the summer season, on the charming shaded terrace surrounded by gardens.
