BURGUNDY AND THE CISTERCIAN HERITAGE
Upon arrival in Burgundy, you will be transported to your Burgundian oasis for the next three nights, the Chateau de Vault de Lugny, dating from the 13th and 16th centuries, the perfect place to explore northern Burgundy in Chablis and Grand Auxerrois. Cistercian monks, Dukes of Burgundy, generations of men and women, winegrowers, century after century, have patiently built the vineyards of Burgundy, seeking excellence with determination. Relax and unwind before immersing yourself in the history of Burgundy, the cradle of Cistercian architecture at the basilica of Vézelay, listed as a World Heritage Site since 1979. Small shops and art galleries abound in the alleys of the village.
LEARN THE UNIQUENESS OF CHABLIS GRANDS CRUS
Today, you will be joined by our sommelier who will make you understand the Climats, these famous plots of vines named and precisely delimited for centuries, and their inscription on the World Heritage List as well as the different faces of Chardonnay, before you drive to a Chablis winemaker, heir to 13 hectares of vineyards once laid out by Cistercian monks. You will learn the importance of the terroir, the long historical tradition combining the grapes, the soils, the exposure of the vineyard and the climate before a tasting of their best vintages. At lunch, you will enjoy haute cuisine and excellent wines at the table of Chef Mathieu Sagardoytho. You may taste rabbit from Burgundy cooked with mussels from Groix and Mirabelle plums from Yonne, served with a fine selection of Chablis and other Burgundy wines of course.
Then it is at the Testut wine estate that you will approach all the stages of the production of the great Burgundy wines of the property, from the vine, to bottling, through the various traditional stages including manual harvesting. You will finish with a tasting of their Grands Crus and 1ers Crus before continuing in the old 17th century cellars of the Dauvissat family who will tell you about their philosophy and their techniques for preserving and expressing the fruit of the vine as well as possible.
Your evening will be spent tasting the two-star cuisine of Jean-Michel Lorain. Culinary emotion and the exaltation of the taste buds are on the program with a food and wine pairing in the purest French tradition. WINES OF BURGUNDY, WINES OF KINGS
Today the Alligoté and Sauvignon grape varieties for the whites will appear in your glass in addition to the Chardonnay and Pinot Noir for the reds. Your sommelier will give you a landscape reading while you’re heading to Saint-Bris-Le-Vineux, a village that rests on some of the most amazing medieval cellars in Burgundy. Saint-Bris has the particularity in Burgundy of producing only white wines from the Sauvignon grape variety on an appellation area of 133.63 hectares. You will be welcomed by a family of winegrowers since the 15th century who will tell you about traditions and a passion for wine that has lasted for 6 centuries in vaulted cellars from the 11th and 12th centuries, then you will reach the vineyard of Coulanges-la-Vineuse whose wines were already famous on the tables of many kings of France including Henri IV and Louis XIV.
You will return via one of the most beautiful villages in France with its 14th and 15th century medieval houses in Noyers-sur-Serein. This evening you will taste the Michelin starred cuisine of Chef Franco Bowanee in the majestic setting of the Château de Vault-de-Lugny.

You will take the road to Beaune and settle in the intimate and exclusive secenery of the Hotel Le Cep, made up of several residences dating from the 14th to 18th centuries that you will join with happiness after having explored this magnificent region of France. Nothing better than a walk in the city of Beaune to soak up its atmosphere and discover all its beauty.
Your wine expert will join you to take you to visit the famous Hospices with glazed tiles as well as the aging cellars of a famous house. You will taste three rare appellations including a remarkable vintage during an exceptional tasting of 4 Grands Crus and 3 Premiers Crus. Your evening will be spent in the famous restaurant L’Oiseau des Vignes, feasting on gastronomy combining Burgundian specialties and dishes rooted in French cuisine accompanied by the best wines from the cellar which has more than 2000 references.
